Prepared and cooking time: 50 minutes
Serve: 2 servings
Ingredients:
- 160 g chicken breast, cut into 2 cm chunks
- 200 g sweet potato, cut into 2 cm chunks
- 50 g onion sliced ( ½ onion)
- 1 teaspoon shallot chopped fine
- 2 teaspoons of curry powder
- 1+ ½ teaspoons of salt
- 1 + ½ teaspoons sugar
- 3 lemon grasses, crush lightly
- 200 ml water
- 60-80 ml of coconut milk (100 ml coconut milk is possible)
- 2-3 teaspoons of cooking oil
Directions:
- Add 1 teaspoon of salt, ½ teaspoon of shallot chopped fine and curry powder into chicken breast, mix them and let them wait for 5-10 minutes.
- Fry sweet potato, add the rest of salt into the sweet potato. Fry it for 2-3 minutes. This step will keep your sweet potato that has light color.
- Use a sauce pan, fry the rest of shallot until it smells. Add the chicken breast and fry it for 3-5 minutes.
- Add water into the saucepan, cook chicken for boiling, keep the heat in medium level. Add sweet potato and lemon grass. Cook them for 7-10 minutes.
- Pour the coconut milk and sugar into the saucepan. Stir them and season again to suite your taste. Check again the sweet potato if it is cooked. Add the onion, stir them and turn off the cooker. The chicken curry is done.
- Serve curry warmly. It is possible to serve the simple chicken breast with steamed rice or bread.
