Prepare and cooking time: 50-55 minutes

Serves: 6-8

Ingredients:
  • 100 g of whole wheat flour
  • 80 g of margarine
  • 50 g of dried coconut
  • 50 g of granulated sugar
  • pineapple jams with small pieces
  • ½ teaspoon of baking powder
Directions
  • Mix the flour and margarine together
  • Add dried coconut, sugar, baking powder. Mix them well.
  • Knead the dough for 10-15 minutes. Put it into the bowl, cover it with a towel or plastic wrap and wait for 10-15 minutes.
  • Preheat the oven for 180-220 C degree. It depends on your oven.
  • Take the dough out off the bowl. Divide the dough into small pieces in the size of your thumb size. Place them on the baking tray. Use a spoon to flatten the dough. And then put a pineapple jam on the dough.
  • Bake the cookies for 15-18 minutes or until they turn to be light golden. Turn off the oven. Take the cookies out off and let them cool.
  • Enjoy them or keep them in the plastic packet or a box for 3 days. Do not keep them for longer than a week because the coconut cookies have their good flavor in the short time only.
