Simple cocoa cookies are same with simple homemade shortbread in the list of easy recipes related to shortbread that many people love to bake and love to enjoy. The ingredients are not different from each other so far excepted cocoa powder and much more margarine or butter at room temperature.
Cocoa powder is produced from cocoa beans which widely farmed in tropical countries. Cocoa powder is low in cholesterol. It is used combined in many cake recipes from the easy recipes to the difficult ones. Cocoa powder is also rich in vitamins and minerals such as potassium, zinc, iron, magnesium, phosphorus, copper and manganese. However cocoa powder is considered the type of food that contained the saturated fat, so the amount of cocoa powder is limited in some recipes for special cases related to tight diet plan or health situation.
Prepared and baking time: 15 minutes
Serve: 16-18 cookies
Ingredients:
- 150 g all purpose flour or whole wheat flour
- 80 g margarine or unsalted butter at room temperature
- 80-100 g granulated sugar
- 1 whole egg
- 1 spoon of cocoa powder
- ½ teaspoon baking soda
- ½ teaspoon vanilla powder or vanilla extract
- 1 pinch of salt
Directions:
- Preheat the oven at 180 C degree
- Cream the butter and sugar until well mixed for the fluffy mixture.
- Beat egg, add in it vanilla extract in the case you use vanilla extract if not just beat the egg and you may mix vanilla powder with flour later.
- Sift flour, cocoa powder and mix them with salt, cocoa powder, baking soda (and vanilla powder) well.
- Mix together dry and wet ingredients above for dough.
- Make the small balls of dough, use the spoon flatten the ball for thin size. Lightly cut on the surface of small balls with the cross lines.
- Place the small balls flatten on baking tray with the parchment and bake them for 10-12 minutes or until the edges of cookies firmed. Turn off the oven, let the cookies cool on a wire rack.
- Enjoy or keep them on plastic bag for use later.
