Basa fillet rolls with shrimps and dry coconut

Ingredients:
  • 400 g basa fillet
  • 100 g shrimps peeled but keep the tails
  • 50 g dry coconut flesh
  • 2 teaspoons of coconut powder
  • 1 spoon of cornstarch
  • 1 teaspoon of satay sauce or chili satay sauce

Note: In the case you do not use satay sauce or chili satay sauce, ½ teaspoon of garlic chopped fine + ½ teaspoon of shallot chopped fine + ½ teaspoon of chili sauce may be used instead.

  • ½ teaspoon of salt
  • 2 teaspoons of cooking oil
  • 1 teaspoon of oyster sauce
  • 1 pinch of curry powder
Directions:
  • Slice basa fillet into pieces about 10 cm for each. Tilt your knife at 45 degree against the cutting board while slicing for thin pieces.
  • Add into the fish fillet sliced the ingredients included a pinch salt, satay sauce, 1 teaspoon of cooking oil, cornstarch, oyster sauce, curry powder. Mix them well.
  • Add into the shrimps a pinch of salt, coconut powder mix them and wait for 5 minutes. Add dry coconut flesh in, mix them again.
  • Place each shrimp into a fish sliced, roll it and expose its tail. Do the same steps with the rest fish fillet sliced and shrimps.
  • Preheat your oven at 220 C degree.
  • Put the fish rolls in a non sticky baking tray. Scan the cooking oil on the rolls. Bake them at 200 to 220 C degree depend on your oven for 25 minutes or until they turn to light golden brown.
  • Basa fillet rolls with shrimps and coconut may be enjoyed together with chili sauce or coconut sauce in the case you love to have it in strong flavor.
