Spices list is considered the separated part from herbs list. If the herbs are mentioned as the green part from herb and spice plants, the spice is the rest in dried form and ground commonly. From this point, it seems to be easier for us to distinguish them although there is just a thin line between herbs and spice sometimes.

If we have already the herbs list in western dishes and the herbs list in eastern dishes in the last articles, it is now the spice list with different types may contribute to your kitchen richly and clearly with the variety of herb and spice world.

In the spices list, it may have different groups from the part of plant used such as berry, seed, leaf, fruit, flower, bark, root, bulb or stigma etc. Beside the spice may be dried or fresh using or both. It may be chopping status or milling or ground or powder or essential oil etc. And it may be the single form itself or the spice mixture with different spices mixed together.

They are included the name such as Allspice, Juniper, pepper in which there are black pepper, white pepper, green peppercorn and pink peppercorn.

This is Jamaica pepper. The type is harvested when it is still green and be dried. Allspice mostly is used to add into the dishes in the dried and milling or ground form. This spice is consumed popularly in Caribbean area, Middle East and The U.S.

The juniper berries are used in the fresh or fried form under with whole wipe fruit or lightly crushed status. It is cooked as sauce to contribute the flavor to the popular dishes as rabbit, venison or veal etc or added into the drink. There is also the essential oil from this type to give additionally the aroma for gin and an element in producing perfume.

The pepper has different types by the processing from the green fruit or wipe. The fresh green pepper after harvesting may be used immediately in the fried dishes. It may be pickled with vinegar to be stored longer. In the dry form, the pepper is used with whole fried fruit or milling or ground. It makes the dishes to be more attractive in flavor.
